Maple ice cream
There used to be a Ben and Jerry’s maple flavored ice cream and i miss it dearly. This recipe is not the one from their book but it’s inspired by it. I replaced all the sugar in the recipe with maple syrup to really amp up the flavor. it’s glorious. note: if you don’t want to use raw egg, you can cook the base, but i would advise using only the yolks as the white will give you an eggy flavor when cooked.
1 Pint heavy cream
227g maple syrup (1 cup)
2 eggs
1/8t ice cream stabilizer (optional)
Pinch salt (non negotiable!)
Blend until smooth and churn.
eat as soft ice cream of let it firm up in the freezer.
The scoop on the photo has a sesame short bread cookie and maple apple.
